I would say to go through your old projects and analyze where you stopped. Write down checklists for each file in notepad or something, and just make it into a big compilation of a file. Once that's done, find the most common stopping point(s) in your files, and perhaps you'll find that you're only stopping because you're getting to a part of the vehicle you actually just hate to work on. Perhaps it's the more complex interior of a car that strikes you as needlessly complex, and the amount of progress you see in a day is so minimal that you become discouraged.

Perhaps you're stopping once you get to texturing the stuff, which might be a clue to just hating the unwrap and texturing process... not sure, but at least the checklist thing could help identify possible points where you just loose the thrill of modeling
