when you load an image plane, its mapped to the camera, so what happend was the camera/image plane was infront of the grid, try moving the camera and the center x/y/z,
and the specs of youre box are fine ive run maya on less, though might want to get a bigger psu, 550W maby |

after a long time of maya experience, when ever anyone runs to a problem like this, just throw out your preferences and restart maya. it will re create the preferences.
