well, you will probably be wanting a vehicle that won't pull any crazy surfaces on you... so I'd recommend a '91 Ford Aerostar or '81-'88 Dodge Aries... an '82 ford mustang would also work, as would an '85 camaro.
my final suggestion would be a 1984 pontiac fiero
though really, it doesn't matter what vehicle you start with... and if you only do simple cars when you start out, when you get to a more unusual car shape, like a mazda rx-7, or a toyota celica... then you won't have experience doing any of the more challenging geometry, and then you'll be back to square one.
So I'd encourage you to start on a more crazy-shaped vehicle, like a jaguar xj220, smart fortwo, '98 ford taurus, mazda rx-7, '62 corvette, '92 thunderbird, or even an '00 dodge intrepid...
Jumping into the hard stuff first will give you much more experience much faster than normal...
